Nagato City in Yamaguchi Prefecture is the production center of Senzaki Kamaboko! It is famous for its unique "Yaki-nuki" kamaboko. Yaki-nuki" is a method of grating fresh sea weeds and guchi, and gradually baking them by indirect heating over a fire from under the board.
