You can enjoy fatty horse mackerels this year, too!

On Wednesday, May 25, the first "Senzaki Season Declaration Senzaki Toro Aji" was issued for the first time this year in Nagato City.

The "Senzaki Season Declaration Senzaki Toro Aji" is issued by the Nagato Supervisory Branch of the Fisheries Cooperative Association when a certain amount of horse mackerel landed at the Senzaki market during the horse mackerel season (around May to July) is measured using a near infrared spectrometer and the fat content averages 10% or more.

In season, horse mackerels, which are fatty and even more delicious, are sold at stores in the city under the name of "Senzaki Toro Aji" (yellowtail horse mackerel).

Recommended way to eat

Fresh horse mackerel can be prepared in a variety of ways in addition to the standard dishes such as sashimi and salted and grilled. Large horse mackerels have a deeper flavor when cooked, so they can be prepared in the style of mackerel stewed with miso or cooked with ara.

Sashimi: Sashimi is served in sashimi soy sauce with wasabi (Japanese horseradish) on top. If you prefer a different taste, drizzle olive oil instead of soy sauce and sprinkle salt on top.
Tataki】Add chopped green onion and ginger, and mix with a knife. Add wasabi (Japanese horseradish), yuzu kosho (Japanese citrus pepper), and grated garlic.
Nanban-zuke: Small sized horse mackerels called "zengo" are often cooked as "nanban-zuke". The fish is coated with flour and deep fried, then marinated in a sweet and sour sauce with onions, carrots, cucumbers, and hawk's claws.
Nama-zushi: Horse mackerel with the head and entrails removed is marinated in sweet and sour vinegar, and slices of ginger and cucumber are inserted into the belly.
