Dai-ko Hayakawa Shoten is a fresh fish wholesaler that has been in the Senzaki area for four generations.
On September 14 (Sat), the roadside station Senza Kitchen, which has been operating under the name "Yondaime Daisoko," began a demonstration sale of torafugu (blowfish), which will be available every Saturday from 11:00 a.m. until October 26 (Sat).
Torafugu is raised by land-based cultivation that draws in seawater from Aomi Island in Nagato City, which is located in the Kita-Nagato Kaigan National Park, and allows for meticulous control of the fish. Because the fish farm and processing plant are located right next to each other, the freshness of the fish is a source of pride.
Mr. Hayakawa, owner of "Daisho Yondaime," is now pulling torafugu at the direct sales counter in Senza Kitchen, Roadside Station. In response to customers' requests, he completes the fugusashi one after another with careful knife work.
Many of the customers that day were from out of town and visited Senza Kitchen without knowing about the demonstration sales.
Seeing one customer walking around the restaurant with a fugu sashimi, another replied with a smile, "I asked for it because I wanted to eat it too. They enjoyed gazing at the fugu being served on their plates like art in front of their eyes.
When you bring the clear, transparent meat to your mouth, you can enjoy the glutinous texture and sweetness of torafugu.
