Kamaboko has a long history, first appearing in an ancient document in 1115 during the Heian period (794-1185). In honor of this year, November 15 is "Kamaboko no Hi" (fish cake day)! It is said that Senzaki in Nagato City, Yamaguchi Prefecture, started serving kamaboko more than 300 years ago, when it was presented to Lord Yoshimoto Mori. Senzaki kamaboko" is made by a process called "yaki-nuki," in which the fish is heated from the underside of the kamaboko board, bringing out the natural flavor of the fish and giving it a delicious crunchy texture!
