Taste "Nagato City Fresh Fish" and "Yamaguchi Hotoriwai Sake Kasu Farmed Fish (Yamaguchi Hotoriwai Series)"!

Yamaguchi Prefecture has developed "Yamaguchi Hororoshi Sake Kasu Farmed Fish (Yamaguchi Hororoshi Series)" in which farmed fish are fed with sake lees from Yamaguchi's local sake. The first shipment of "tipsy mackerel" will be shipped this year, and a "tipsy mackerel" fair will be held at roadside stations in Nagato City, Hagi City, and Abu Town.
Fresh fish from Nagato City will also be on sale at Senza Kitchen, a roadside station in Nagato City!

About "tipsy mackerel

This is the first product in Yamaguchi’s “Yamaguchi tipsy series,” a brand announced and launched last year.

Certain standards are established through testing, including the ratio of sake lees added to the diet and the feeding period of the sake lees-added diet, and only those that meet these standards become “tipsy mackerel.

The meat contains more glutamate acid and alanine, which are tasty and sweet ingredients, than normal ones, and a fruity aroma ingredient that is said to originate from sake lees has been detected, which, combined with the moderate fat, makes the fish elegant.
